Farmer's Toffee:
Typically called poor man's toffee.....a wonderfully buttery tasting candy that will put smiles on everyone! Now available at the barn!
Ingredients:
1 cup butter
1/2 cup light brown sugar
1 sleeve of saltine crackers
2 cups milk chocolate or semi-sweet chips
1 cup chopped pecans
Lay saltines on sprayed or parchment lined cookie sheet with salt side down. Do not double layer. Cook butter and brown sugar for 3 minutes stirring constantly. Pour butter mixture over saltines and bake for 15 minutes at 350 degrees. Sprinkle chips over baked saltines and spreading evenly for coverage. Next, sprinkle pecans over melted chips and refridgerate for one hour. Break apart and enjoy!
Golden Dinner Rolls:
Ingredients:
2 packages active dry yeast (.25 ounces)
1 cup warm water (110 to 115 degrees)
1/2 cup sugar
1 teaspoon salt
1 cup milk
1/2 cup shortening
3 eggs, beaten
6 cups unbleached flour
Soften yeast in warm water. Place sugar and salt in large mixing bowl. Heat milk and shortening until shortening melts, add to mixing bowl along with eggs and yeast mixture. Stir in 1 cup of flour at a time to form a soft dough that can be kneaded. Knead on a lightly floured surface until smooth and elastic. Place in a large greased bowl. Cover and let rise in a warm place until doubled, about an hour. Punch dough down. Turn out onto a lightly floured surface. Shape into desired rolls or loaves. Place on greased baking sheets or in bread pans. Cover and let rise until nearly doubled. Bake rolls at 375 degrees for 15 minutes or until golden brown. Brush with melted butter. Remove from pans and cool on wire racks.
Quich Lorraine:
Ingredients:
1 pastry shell pie crust
12 slices bacon
1 cup shredded swiss cheese
1/2 cup minced onion
1 handful fresh spinach
4 eggs beaten
2 cups 1/2 and 1/2
1/4 teaspoon salt
1/4 teaspoon white sugar
1/8 teaspoon cayenne pepper (secret ingredient)
Bake frozen crust at 425 for 4 minutes and take out of oven. Chopped the cooked bacon into bits and combine spinach, cheese, onion in bowl then into pastry shell. You may substitute other veggies in place of the spinach if you wish. In medium bowl, wisk eggs, cream, salt, sugar and cayenne and pour into pastry shells over the other ingredients. Bake for 15 minutes at 425 then reduce heat to 300 degrees for an additional 35 minutes. Quiche is done when knife inserted 1 inch from edge comes out clean. Allow quiche to sit for 10 minutes prior to cutting into wedges.
